The DOC in brief

What is Est! Est!! Est!!! di Montefiascone DOC?

It is a Denominazione di Origine Controllata wine produced around Montefiascone and in part of the province of Viterbo. Recognised in 1966, the DOC celebrates its sixtieth anniversary in 2026. Its official production rules define the area, permitted grapes and wine characteristics.

The Defuk legend

Three signs and an unforgettable name

Tradition says that Martino wrote “Est” to guide his master towards good wine. At Montefiascone, the wine was considered so remarkable that the word was repeated three times. The Fair brings the story into the streets through the Historic Parade, the arrival of Martino and the re-enactment of Defuk’s death.

Montefiascone overlooks Lake Bolsena, within a landscape shaped by volcanic activity. Elevation, exposure and the agricultural history of the hills help explain the close relationship between wine and local identity.

Legend and regulation

Two different stories that now coexist

The Defuk tale belongs to local tradition; the DOC belongs to the legal and productive history of wine. Keeping the two distinct makes both easier to understand. For current grape composition and production requirements, the official ministerial rules remain the authoritative source.
